Homemade tarragon vinegar

Capture the fresh flavour of summer and enjoy it throughout the winter. Preparing tarragon vinegar while the herb is at its peak preserves its delicate, sweet, anise-like aroma for the months when fresh tarragon is harder to find. Perfect for salads, dressings, sauces, marinades, fish, and roasted vegetables, it is a simple way to keep seasonal flavours alive all year round.

Ingredients:
1 L. Vinegar
50 Gr. Fresh estragon

Steps:

Prepare enough sterilized bottles or jars to hold 1 litre of liquid.

Clean the fresh tarragon carefully and divide it between the bottles or jars. Fill with vinegar, cover tightly, and store in a cool, dry, and dark place.

After a few months of infusion, you will have a beautifully aromatic tarragon vinegar, perfect for everyday cooking — especially during winter, when fresh tarragon is much harder to find.
